Ingredients
  

  • 1 lb ground beef
  • 1 medium onion diced
  • 2 cups beef broth
  • 1 can 15 oz diced tomatoes
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn kernels, drained
  • 1 packet taco seasoning
  • 1 cup tomato sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder optional for extra spice
  • Salt and pepper to taste

Instructions
 

Cook the Beef:

  • In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.

Sauté the Onions:

  • Add the diced onion to the pot and sauté for 2-3 minutes until softened.

Season the Beef:

  • Stir in taco seasoning, garlic powder, chili powder (if using), salt, and pepper. Mix everything well to coat the beef.

Add Liquids:

  • Pour in the beef broth, tomato sauce, and diced tomatoes. Stir to combine.

Add Beans and Corn:

  • Mix in the black beans and corn kernels. Bring the mixture to a gentle simmer.

Simmer:

  • Reduce the heat to low and let the soup simmer for 15-20 minutes, stirring occasionally.

Taste and Adjust:

  • Taste the soup and adjust seasoning as needed. Add more chili powder for extra spice or a pinch of salt for flavor.
