Step 1: Prepare the Cake Batter
Preheat your oven to 350°F (175°C). Grease and line three 8-inch cake pans with parchment paper.
In a bowl, whisk together flour, baking powder, and salt. Set aside.
In a large mixing bowl, beat butter and sugar until light and fluffy.
Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
Gradually add the dry ingredients, alternating with milk, and mix until smooth.
Step 2: Color and Bake the Cake Layers
Divide the batter evenly into three bowls. Add pink, blue, and purple food coloring to each bowl and mix well.
Pour the colored batters into the prepared pans and smooth the tops.
Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
Step 3: Make the Buttercream Frosting
In a mixing bowl, beat butter until creamy.
Gradually add powdered sugar, beating until smooth.
Mix in vanilla extract and heavy cream, whipping until fluffy.
Divide the frosting into three bowls and color each with pastel shades.
Step 4: Assemble and Frost the Cake
Place the first cake layer on a serving plate. Spread a layer of frosting on top.
Repeat with the remaining layers, stacking them evenly.
Apply a thin crumb coat of frosting around the cake and refrigerate for 20 minutes.
Cover the entire cake with a final layer of buttercream, smoothing it with a spatula.
Step 5: Decorate the Unicorn Cake
Use a piping bag with a star tip to create colorful swirls and rosettes on the cake.
Attach a fondant unicorn horn and ears to the top.
Add sprinkles, edible glitter, and gold dust for a magical touch.
