Ingredients

  • 2 –4 matjes herring fillets mildly salted, pickled
  • 2 crusty bread rolls
  • ½ small red onion thinly sliced
  • 2 –4 dill pickles sliced lengthwise
  • 2 tablespoons remoulade sauce
  • A few lettuce leaves
  • Butter or margarine
  • Fresh dill optional
  • Thin apple slices optional

Instructions

Slice the Bread Rolls:

  • Cut each crusty roll horizontally, keeping one edge intact to form a hinge. Lightly butter the inside of each roll to prevent sogginess.

Layer the Lettuce:

  • Place a few crisp lettuce leaves on the bottom half of each roll to create a fresh, crunchy base.

Add the Matjes Herring:

  • Gently lay one or two matjes herring fillets over the lettuce. Pat them dry beforehand for the best texture.

Top with Pickles and Onions:

  • Add sliced dill pickles and thinly sliced red onions for a tangy crunch that balances the richness of the herring.

Spread the Remoulade:

  • Spoon or spread remoulade sauce over the fillings. You can use store-bought or a homemade blend of mayo, mustard, and herbs.

Optional Garnishes:

  • Add fresh dill for a herbal touch or thin apple slices for a hint of sweetness.

Close and Serve:

  • Gently close the roll, press lightly, and serve immediately while fresh and chilled.
