Ingredients
  

  • 1 package phyllo dough
  • 4 tbsp melted butter
  • 1 cup fresh cranberries
  • ¼ cup sugar
  • ¼ cup water
  • 4 oz goat cheese
  • Fresh thyme for garnish optional

Instructions
 

Prepare the Phyllo Cups:

  • Preheat the oven to 375°F (190°C). Brush a muffin tin with butter or cooking spray. Layer 3-4 sheets of phyllo dough in each cup, brushing each layer with melted butter. Bake for 10-12 minutes, until golden and crispy.

Make the Cranberry Filling:

  • In a saucepan, combine cranberries, sugar, and water. Cook over medium heat until cranberries burst and the mixture thickens (about 10 minutes). Let it cool.

Assemble the Cups:

  • Spoon the cranberry filling into the baked phyllo cups. Top with a small dollop of goat cheese.

Finish Baking:

  • Return the cups to the oven for 5-7 minutes, or until the goat cheese softens.

Garnish and Serve:

  • Garnish with fresh thyme (optional) and serve warm. Enjoy!
