Ingredients
  

  • 1 tbsp Ras el Hanout
  • 1-2 tbsp Harissa adjust based on spice preference
  • ¼ tsp Saffron
  • 1 tsp Coriander
  • 1 tsp Cumin
  • 500 g Lamb or Chicken cut into chunks
  • 500 g Beef Optional Alternative, cut into chunks
  • 1 Preserved Lemon sliced
  • 2 Onions finely chopped
  • 4 cloves Garlic minced
  • ¼ cup Fresh Herbs Parsley, Cilantro, chopped

Instructions
 

Prepare Ingredients:

  • Slice 1 preserved lemon.
  • Chop 2 onions, mince 4 garlic cloves, and chop 1/4 cup parsley and cilantro.

Marinate the Meat:

  • Mix 500g lamb/chicken/beef with 1 tbsp Ras el Hanout, 1-2 tbsp Harissa, 1/4 tsp saffron, 1 tsp coriander, and 1 tsp cumin.
  • Let it marinate for 30 minutes.

Sauté Aromatics:

  • Heat 2 tbsp olive oil in a pot.
  • Sauté onions and garlic until soft (about 5 minutes).

Cook the Meat:

  • Add the marinated meat and brown on all sides (5-7 minutes).
  • Stir in the preserved lemon slices.

Simmer:

  • Add 2 cups water and bring to a boil.
  • Reduce heat to low, cover, and simmer for 1-1.5 hours until the meat is tender.

Serve:

  • Sprinkle with fresh parsley and cilantro.
  • Serve hot with couscous, bread, or rice.
