Ingredients
  

  • 1 pound Ground Beef
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 cans 14.5 ounces each Diced Tomatoes
  • 1 can 15 ounces Black Beans, rinsed and drained
  • 1 can 15 ounces Kidney Beans, rinsed and drained
  • 1 can 15 ounces Corn, drained
  • 1 can 8 ounces Tomato Sauce
  • 1 can 4 ounces Green Chilies, diced
  • 1 packet or 2 tablespoons homemade Taco Seasoning
  • 2 cups Beef Broth
  • Optional Toppings:
  • Shredded Cheese Cheddar or Monterey Jack
  • Sour Cream
  • Avocado Slices
  • Fresh Cilantro
  • Tortilla Chips or Strips
  • Lime Wedges

Instructions
 

Step 1: Brown the Meat

  • In a large soup pot or Dutch oven, heat a drizzle of olive oil over medium heat.
  • Add your ground beef (or turkey, if preferred) along with the chopped onion.
  • Cook until the meat is fully browned and onions become translucent—about 5 to 7 minutes.
  • Tip: Break up the meat into small pieces using a wooden spoon to ensure even cooking.

Step 2: Add Garlic and Seasonings

  • Stir in the minced garlic and cook for an additional 1 minute until aromatic.
  • Sprinkle the taco seasoning evenly over the meat and onions, stirring well to coat everything thoroughly.
  • Tip: Cooking spices briefly in oil intensifies their flavors, making your soup taste amazing.

Step 3: Combine Remaining Ingredients

  • Add the diced tomatoes, black beans, kidney beans, corn, tomato sauce, green chilies, and beef broth to your pot.
  • Gently stir until all ingredients are nicely combined.

Step 4: Simmer to Perfection

  • Bring the soup to a gentle boil, then immediately lower the heat to a simmer.
  • Cover partially with a lid, allowing the soup to gently bubble for 20–30 minutes.
  • Tip: A longer simmer deepens the flavors, but even 20 minutes yields delicious results!
