- 1 pound Ground Beef
- 1 medium Onion chopped
- 2 cloves Garlic minced
- 2 cans 14.5 ounces each Diced Tomatoes
- 1 can 15 ounces Black Beans, rinsed and drained
- 1 can 15 ounces Kidney Beans, rinsed and drained
- 1 can 15 ounces Corn, drained
- 1 can 8 ounces Tomato Sauce
- 1 can 4 ounces Green Chilies, diced
- 1 packet or 2 tablespoons homemade Taco Seasoning
- 2 cups Beef Broth
- Optional Toppings:
- Shredded Cheese Cheddar or Monterey Jack
- Sour Cream
- Avocado Slices
- Fresh Cilantro
- Tortilla Chips or Strips
- Lime Wedges
Step 1: Brown the Meat
In a large soup pot or Dutch oven, heat a drizzle of olive oil over medium heat.
Add your ground beef (or turkey, if preferred) along with the chopped onion.
Cook until the meat is fully browned and onions become translucent—about 5 to 7 minutes.
Tip: Break up the meat into small pieces using a wooden spoon to ensure even cooking.
Step 2: Add Garlic and Seasonings
Stir in the minced garlic and cook for an additional 1 minute until aromatic.
Sprinkle the taco seasoning evenly over the meat and onions, stirring well to coat everything thoroughly.

Step 3: Combine Remaining Ingredients
Add the diced tomatoes, black beans, kidney beans, corn, tomato sauce, green chilies, and beef broth to your pot.
