  • 1 lb boneless skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 tablespoon fresh ginger grated
  • 2 carrots sliced thin
  • 2 stalks celery chopped

Soup Base and Noodles:

  • 6 cups low-sodium chicken broth or bone broth
  • 2 tablespoons soy sauce
  • 1 –2 teaspoons red pepper flakes or 1 tablespoon sriracha
  • 4 oz egg noodles or rice noodles

Finishing Touches:

  • Juice of 1 lime
  • Fresh cilantro or scallions chopped
  • Salt and black pepper to taste

Instructions
 

Sauté Aromatics:

  • Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger. Cook for 2–3 minutes until fragrant and slightly softened.

Cook the Chicken:

  • Add chicken breasts or thighs to the pot. Pour in the broth and bring to a gentle boil. Reduce heat, cover, and simmer for 15–18 minutes, until the chicken is fully cooked.

Shred the Chicken:

  • Remove the chicken and shred it with two forks. Set aside.

Add Veggies and Seasoning:

  • To the broth, add carrots, celery, soy sauce, and your preferred spice (red pepper flakes or sriracha). Simmer for 8–10 minutes until vegetables are tender.

Cook the Noodles:

  • Stir in the noodles and cook according to package instructions, about 5–7 minutes, until al dente.

Combine and Finish:

  • Return shredded chicken to the pot. Add lime juice, salt, and pepper. Stir well and simmer for 2 more minutes.

Serve and Garnish:

  • Ladle into bowls and top with chopped cilantro or scallions. Add any optional garnishes like sesame oil, spinach, or coconut milk. Serve hot.
