Ingredients
  

Beef Mixture

  • 1 tbsp olive oil
  • 2 pounds ground beef (80/20)
  • 1 yellow onion diced small
  • 2 cloves garlic finely minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp Tabasco sauce optional
  • 1 tsp coarse salt to taste
  • 1 tsp freshly cracked black pepper to taste

Cheese Layers

  • 0.5 pound shredded American cheese
  • 6 slices American cheese

Building the Sliders

  • 1 pack sweet Hawaiian rolls kept attached and sliced in half
  • 1 thinly sliced dill pickle pieces optional
  • 1 tbsp sesame seeds
  • 2 tbsp butter or reserved beef drippings for brushing over tops

For Serving

  • 1 aioli, ketchup, mustard or any dipping sauce

Instructions
 

  • Preheat oven to 350°F (175°C). Avoid the fan setting to keep buns soft while cheese melts evenly.
  • Heat olive oil in a large nonstick skillet over medium-high. Add ground beef, season with salt and pepper, and break apart as it browns. Cook until no pink remains. Drain fat and transfer meat to a plate.
  • In the same skillet, cook diced onion with a pinch of salt over medium heat for 4–5 minutes. Reduce heat and cook another 10 minutes until light brown. Stir in garlic for 30 seconds until fragrant.
  • Return beef to pan. Add Worcestershire and optional Tabasco sauce. Stir in half the shredded cheese until melted. Taste and adjust seasoning.
  • Place bottom half of rolls in a 13×9 dish. Lay sliced cheese across surface to form a layer.
  • Spread beef and onion mix over cheese. Sprinkle with remaining shredded cheese. Add pickles if using.
  • Top with remaining rolls. Brush with butter or drippings. Sprinkle with sesame seeds.
  • Cover with foil. Bake 20 minutes. Uncover and bake another 20 minutes until cheese is melted and tops are lightly toasted.
  • Let rest 1–2 minutes before cutting. Serve warm with dipping sauces.

Notes

Drain meat well to avoid soggy buns. Use sliced cheese under filling to create a moisture barrier. Bake uncovered for crisp tops.
To make ahead, store cooked beef mix for 1–2 days and assemble just before baking. To reheat, wrap in foil and warm at 350°F or microwave individual sliders for 15–20 seconds.
