Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 red bell pepper roasted and peeled
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • Salt and pepper to taste

Instructions
 

Prepare the Marinade:

  • In a blender or food processor, combine the roasted red pepper, minced garlic, olive oil, lime juice, chili powder, cumin, smoked paprika, salt, and pepper.
  • Blend until smooth.

Marinate the Chicken:

  • Place the chicken breasts in a shallow dish or a ziplock bag. Pour the marinade over the chicken, ensuring it is evenly coated.
  • Marinate in the refrigerator for at least 15 minutes (or up to 2 hours for more flavor).

Grill the Chicken:

  • Preheat your grill to medium-high heat.
  • Grill the chicken for about 6-7 minutes per side or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked.

Serve:

  • Remove the chicken from the grill and let it rest for a few minutes before slicing and serving.
