Ingredients
  

For the Pie Crust:

  • 1 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ½ cup 1 stick unsalted butter, cold and cubed
  • 3 –4 tablespoons ice water

For the Pumpkin Pie Filling:

  • 1 15-ounce can pure pumpkin puree
  • ¾ cup granulated sugar
  • ½ teaspoon salt
  • 1 ½ teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon optional
  • 2 large eggs
  • 1 12-ounce can evaporated milk
  • 1 teaspoon pure vanilla extract

Optional Toppings:

  • Fresh whipped cream
  • Maple syrup
  • Ground cinnamon or nutmeg
  • Candied pecans for crunch

Instructions
 

Prepare the Pie Dough:

  • Mix flour and salt in a bowl.
  • Cut in cold butter until the mixture resembles crumbs.
  • Add ice water gradually until the dough comes together.
  • Shape into a disk, wrap, and chill for 30 minutes.

Roll Out and Fit the Crust:

  • Roll dough into a 12-inch circle.
  • Transfer to a 9-inch pie dish, trim edges, and crimp.
  • Chill for another 15 minutes.

Blind Bake the Crust:

  • Preheat oven to 375°F (190°C).
  • Line crust with parchment and fill with pie weights.
  • Bake for 15 minutes. Remove weights and bake 5 more minutes.
  • Cool slightly.

Make the Pumpkin Filling:

  • In a large bowl, whisk together pumpkin puree, sugar, salt, spices, and eggs.
  • Add evaporated milk and vanilla; whisk until smooth.

Fill and Bake the Pie:

  • Pour filling into the cooled crust.
  • Bake at 375°F (190°C) for 45–55 minutes, until edges are set and center is slightly jiggly.
  • Don’t overbake.

Cool Completely:

  • Let the pie cool on a wire rack for 2 hours.
  • Then refrigerate for at least 2–4 hours before slicing.

Serve:

  • Slice and top with whipped cream, maple drizzle, or spiced nuts. Enjoy!
