  • ½ cup unsalted butter softened
  • ¾ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Optional Add-Ins:

  • ½ cup chocolate chips
  • ¼ cup chopped peanuts
  • Sea salt flakes

Preheat the Oven & Prepare Your Baking Sheet

  • Set your oven to 350°F (175°C) and let it preheat while you prepare the dough.
  • Line a baking sheet with parchment paper to prevent sticking and ensure even baking.

Mix the Wet Ingredients

  • In a large mixing bowl, cream together peanut butter, softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  • Add in the egg and vanilla extract, then mix until fully combined.

Combine the Dry Ingredients

  • In a separate bowl, whisk together flour, baking soda, and salt to distribute everything evenly.
  • Gradually add the dry ingredients to the wet mixture, stirring until a soft cookie dough forms.
  • If using mix-ins like chocolate chips or chopped peanuts, fold them in now.

Shape the Cookies

  • Scoop about 1 tablespoon of dough and roll it into a ball.
  • Place the dough balls 2 inches apart on the baking sheet.
  • Use a fork to press a crisscross pattern onto each cookie, slightly flattening them.

Bake to Perfection

  • Bake for 10–12 minutes, or until the edges turn light golden brown.
