  • 1 cup granulated sweetener or sugar alternative
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt

Wet Ingredients:

  • 1 cup kefir plain, unsweetened
  • ½ cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions
 

Step 1: Preheat & Prepare

  • Preheat your oven to 350°F (175°C).
  • Grease and lightly flour a 9x13-inch baking sheet or line it with parchment paper.

Step 2: Mix Dry Ingredients

  • In a large bowl, whisk together the flour, sweetener, baking powder, baking soda, and salt until well combined.

Step 3: Combine Wet Ingredients

  • In a separate bowl, whisk the kefir, melted butter, eggs, and vanilla extract until smooth.

Step 4: Mix Batter

  • Gradually add the wet ingredients to the dry mixture, stirring gently until just combined.
  • Avoid overmixing to keep the cake soft and tender.

Step 5: Bake the Cake

  • Pour the batter evenly into the prepared baking sheet.
  • Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.

Step 6: Cool & Serve

  • Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
