Banana Bread Base
- 4 very ripe bananas about 1⅓ cups mashed
- 1 large egg
- 1 tablespoon vanilla extract
- 3 tablespoons light brown sugar
- 2 tablespoons granulated sugar
Dry Ingredients
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 ½ cups all-purpose flour or white whole wheat flour
For Moisture
- 2 tablespoons unsalted butter melted
- 2 tablespoons unsweetened applesauce optional substitute for butter
Preheat your oven to 350°F (175°C). Lightly grease a 9x5-inch loaf pan and line the bottom with parchment paper if desired.
Place the ripe bananas in a large bowl and mash them until mostly smooth using a fork or potato masher.
Add the egg, vanilla extract, brown sugar, granulated sugar, and cinnamon to the mashed bananas. Stir until fully combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture and stir gently until no dry flour remains. Avoid overmixing.
Fold in the melted butter until fully incorporated. If using applesauce instead, mix it in at this stage.
Pour the batter into the prepared loaf pan and spread it evenly.
Bake for 35 to 45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
Let the bread cool in the pan for 5 to 10 minutes, then transfer it to a wire rack to cool completely before slicing.
Use very ripe bananas with brown spots for the best natural sweetness. For extra texture, add 3/4 cup chopped walnuts or pecans. For a sweeter version, mix in dark chocolate chips. Banana bread can be stored at room temperature for up to 5 days or frozen for up to 3 months.
