Ingredients
  

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • ¾ cup unsweetened cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 1 cup sour cream for added moisture
  • ½ cup heavy cream optional, for frosting or filling

Instructions
 

Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Mix the Dry Ingredients:

  • In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until fully combined.

Add the Wet Ingredients:

  • Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined, either using a hand mixer or a whisk.

Add the Boiling Water:

  • Slowly pour in the boiling water while mixing. The batter will be thin, but this is normal and will result in a moist cake.

Bake:

  • Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Cool the Cakes:

  • Allow the cakes to cool in the pans for 10 minutes. Then transfer them to wire racks to cool completely.

Frost and Decorate:

  • Once the cakes have cooled, frost with your favorite chocolate frosting. You can also add a drizzle of heavy cream for extra richness.
