Creamy Herb Spread

  • 8 oz cream cheese softened to room temperature
  • 3 tbsp mayonnaise adds creaminess
  • 2 tsp fresh dill finely chopped
  • 1 tsp fresh chives finely chopped
  • 0.25 tsp garlic powder
  • salt to taste
  • black pepper to taste

Sandwich Assembly

  • 1 English cucumber sliced very thin
  • 1 loaf soft white bread crusts removed

Instructions
 

  • Place the softened cream cheese and mayonnaise in a bowl. Use a hand mixer to blend until the mixture becomes smooth and creamy.
  • Add the chopped dill, chives, garlic powder, salt, and black pepper. Mix again until the herbs are evenly distributed throughout the spread.
  • Lay the bread slices flat on a clean surface. Spread a generous layer of the cream cheese mixture over one side of each slice, making sure to cover the bread completely from edge to edge.
  • Wash the English cucumber and slice it very thin, about 1/8 inch thick. Use a sharp knife or mandolin for even slices.
  • Arrange the cucumber slices in a single layer on half of the prepared bread slices. Ensure the cucumber covers the bread evenly.
  • If desired, sprinkle a small pinch of chopped herbs or black pepper over the cucumber layer for extra flavor.
  • Place the remaining bread slices on top with the cream cheese side facing down. Press gently to hold the sandwich together.
  • Trim the crusts with a sharp knife for a classic tea sandwich look. Cut each sandwich into three rectangles or triangles.
  • Serve immediately for the freshest taste or cover and refrigerate for up to 24 hours before serving.

Notes

For best results, pat cucumber slices dry before assembling the sandwiches to reduce moisture. Leaving the cucumber peel on adds color and a light crunch, while peeling it creates a softer texture. These sandwiches can be prepared up to 24 hours in advance and stored in an airtight container in the refrigerator. Remove from the refrigerator about 20 minutes before serving so the cream cheese spread softens slightly and the flavor improves.
