Ingredients
  

Dry Ingredients:

  • 1 ½ cups all-purpose flour or whole wheat
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • Optional: ½ teaspoon garlic powder or dried herbs thyme, chives, etc.

Wet Ingredients:

  • 1 cup cottage cheese full-fat or low-fat
  • 2 large eggs
  • ¼ cup plain Greek yogurt
  • 2 tablespoons olive oil

Optional Add-Ins:

  • ¼ cup shredded cheddar or parmesan
  • 1 tablespoon chopped fresh herbs parsley, dill, chives
  • Pinch of chili flakes for a spicy kick

Instructions
 

Preheat the Oven & Prepare the Pan:

  • Preheat your oven to 350°F (175°C). Grease an 8x4-inch loaf pan or line it with parchment paper for easy removal after baking.

Whisk the Wet Ingredients:

  • In a large mixing bowl, combine:
  • 1 cup cottage cheese
  • 2 large eggs
  • ¼ cup Greek yogurt
  • 2 tablespoons olive oil
  • Whisk until smooth. Some small lumps from the cottage cheese are totally fine—they’ll bake out beautifully.

Mix the Dry Ingredients Separately:

  • In another bowl, whisk together:
  • 1½ cups flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • Optional: Add ½ tsp garlic powder or a pinch of dried herbs for extra flavor.

Combine Wet and Dry Mixtures:

  • Gradually add the dry ingredients into the wet mixture. Stir gently until just combined. Be careful not to overmix—this keeps the bread light and fluffy.

Fold in Optional Add-Ins:

  • Now’s the time to mix in your extras if you’d like:
  • Shredded cheese
  • Fresh herbs
  • Chili flakes
  • Fold them in with a spatula until evenly distributed.

Pour and Smooth the Batter:

  • Transfer the batter into your prepared loaf pan. Use a spatula to smooth out the top for even baking.

Bake to Golden Perfection:

  • Bake for 40–45 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

Cool Before Slicing:

  • Let the bread cool in the pan for 10 minutes, then remove it and transfer to a wire rack to cool completely. Slicing it too soon can affect the texture.
