Ingredients
  

  • 2 chicken breasts diced
  • 1 tablespoon olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 1 red bell pepper diced
  • 2 cups chicken broth
  • 1 cup cooked rice
  • 1 can diced tomatoes 14 oz
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon cayenne pepper adjust to taste
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Instructions
 

Cook Chicken

  • Heat olive oil in a large pot over medium heat. Add diced chicken and cook until golden brown, about 6-8 minutes. Set aside.

Sauté Vegetables

  • In the same pot, add onion, garlic, and red bell pepper. Cook for 4 minutes until soft.

Simmer Soup

  • Add chicken broth, diced tomatoes, cumin, chili powder, and cayenne pepper. Bring to a boil, then simmer for 15 minutes.

Add Rice and Chicken

  • Stir in cooked rice and chicken. Simmer for another 5 minutes.

Serve

  • Season with salt and pepper to taste. Garnish with fresh cilantro, if desired.
