Ingredients
  

Vegetables:

  • 1 cup carrots diced
  • 1 cup celery chopped
  • 1 cup onion finely diced
  • 2 cups fresh spinach chopped

Broth & Base:

  • 4 cups vegetable or chicken broth
  • 1 can 14 oz diced tomatoes

Spices & Seasoning:

  • 2 garlic cloves minced
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • ½ tsp black pepper
  • Salt to taste

Optional Add-Ins:

  • ½ cup cooked quinoa or brown rice
  • A squeeze of lemon juice for freshness

Instructions
 

Prepare the Ingredients:

  • Wash and chop all vegetables (carrots, celery, onions, spinach) and any optional add-ins like cooked chicken or tofu.

Sauté Aromatics:

  • Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the diced onion and minced garlic, sautéing until fragrant and translucent (about 3 minutes).

Cook the Vegetables:

  • Stir in the carrots and celery. Cook for 5 minutes, stirring occasionally, until slightly softened.

Add Broth and Tomatoes:

  • Pour in the vegetable or chicken broth and diced tomatoes. Stir to combine and bring the mixture to a boil.

Season the Soup:

  • Add smoked paprika, dried thyme, black pepper, and salt. Reduce the heat to low and let it simmer for 15 minutes.

Finish with Spinach and Protein:

  • Stir in the chopped spinach and cooked chicken or tofu (if using). Simmer for an additional 5 minutes until the spinach wilts.

Optional Add-Ins:

  • If desired, add cooked quinoa or rice to the pot and stir to combine.

Adjust Seasoning and Serve:

  • Taste and adjust seasoning if needed. Serve hot with a squeeze of lemon juice or your favorite toppings, like fresh herbs or grated Parmesan cheese.
