Chicken
- 4 pieces boneless skinless chicken breasts about 2 pounds total
- 8 slices turkey ham or smoked turkey slices
- 8 oz Swiss cheese sliced or shredded
- 1 tsp salt to taste
- 1 tsp black pepper freshly ground
Crispy Coating
- 3 cups corn flakes cereal crushed
- 6 tbsp butter melted
Simple Sauce
- 1 cup mayonnaise
- 2 tsp yellow mustard adjust to taste
Pat the chicken breasts dry and slice each one horizontally to create thinner pieces.
Pound the chicken between plastic wrap until thin and even.
Place a slice of turkey ham and Swiss cheese onto each piece of chicken.
Roll each piece tightly into a log, tucking in the sides to seal the filling.
Wrap each roll in plastic wrap and refrigerate for at least 30 minutes.
Preheat oven to 400°F (200°C). Crush corn flakes into fine crumbs and prepare melted butter in a separate dish.
Unwrap chicken, season lightly with salt and pepper, dip in melted butter, then coat with cornflake crumbs.
Place coated chicken on a greased baking sheet with space between each piece.
Bake for about 30 minutes or until the internal temperature reaches 160°F (71°C).
Mix mayonnaise and mustard in a bowl until smooth to create the sauce.
Let chicken rest for a few minutes before slicing and serve with the sauce.
For best results, chill the rolled chicken before baking to prevent cheese leakage. You can substitute Swiss cheese with Gruyère or Emmental for a deeper flavor. If cornflakes are unavailable, use panko breadcrumbs or crushed crackers for a similar crispy texture.
