For the Creamy Chicken Stew:
- 2 tablespoons butter
- 1 small onion diced
- 2 carrots sliced
- 2 celery stalks chopped
- 2 cloves garlic minced
- 4 cups chicken broth
- 2 cups cooked chicken shredded
- 1 teaspoon dried thyme
- Salt and black pepper to taste
- ½ cup heavy cream or whole milk
- 2 tablespoons all-purpose flour

For the Fluffy Dumplings:
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 tablespoon melted butter
- ½ cup milk
- Fresh chopped parsley or thyme Optional
Sauté the veggies
In a large Dutch oven, melt 2 tablespoons butter over medium heat. Add diced onion, carrots, and celery, and cook for 5–6 minutes, stirring occasionally. Add minced garlic and cook for 30 seconds more.
Thicken the base
Sprinkle in 2 tablespoons flour, stirring to coat the veggies. Slowly pour in 4 cups chicken broth, whisking to remove lumps. Add shredded chicken, dried thyme, salt, and pepper. Simmer for 10 minutes.
Prepare the dumpling dough
In a bowl, whisk 1 cup flour, 2 tsp baking powder, and ½ tsp salt. Add 1 tbsp melted butter and ½ cup milk. Stir until just combined. (Optional: fold in chopped parsley or thyme.)
