Ingredients
  

For the Salad:

  • 2 large onions thinly sliced
  • 1 red bell pepper thinly sliced
  • 1 cucumber sliced
  • 1 handful fresh parsley chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried oregano optional

For Serving:

  • Optional: Feta cheese olives, or cherry tomatoes for added flavor

Instructions
 

Prepare the Vegetables:

  • Thinly slice the onions, red bell pepper, and cucumber.
  • Chop the fresh parsley.

Combine Ingredients:

  • In a large bowl, combine the sliced onions, red bell pepper, cucumber, and chopped parsley.

Make the Dressing:

  • In a small bowl, whisk together olive oil, red wine vinegar, salt, black pepper, and oregano (if using).

Dress the Salad:
