Cake Mix Cookies
Cake mix cookies are soft, chewy, and incredibly easy to bake at home. With just a box of cake mix, oil, and eggs, you can create warm homemade cookies in minutes.
Ingredients
Cookie Dough
- 1 box dry cake mix about 15.25 oz, any flavor
- ⅓ cup vegetable oil or canola oil
- 2 large eggs room temperature
Optional Mix Ins
- 1/2-1 cup mix-ins of choice chocolate chips, sprinkles, chopped nuts, candy pieces, or white chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper or a silicone baking mat to prevent sticking and help the cookies bake evenly.
- In a large mixing bowl, combine the dry cake mix, vegetable oil, and eggs. Stir with a spatula or wooden spoon until a thick and slightly sticky dough forms.
- Fold in 1/2 to 1 cup of your preferred mix-ins such as chocolate chips, sprinkles, or chopped nuts. Stir just until evenly distributed.
- Scoop about 2 tablespoons of dough for each cookie and place the dough balls onto the prepared baking sheets. Leave about 2 inches of space between each cookie.
- Bake the cookies for 10 to 12 minutes until the tops look set and the edges are lightly golden while the centers remain soft.
- Remove the baking sheet from the oven and allow the cookies to rest for about 5 minutes. Transfer them to a wire rack and let them cool completely before serving.
Notes
If the dough feels too sticky to handle, chill it in the refrigerator for about 30 minutes before scooping. Avoid overbaking to keep the cookies soft and chewy. For evenly sized cookies, use a cookie scoop so they bake at the same rate.
