Ingredients
  

Main Ingredients:

  • 2 cans 15 oz each black beans
  • 2 tbsp olive oil
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 2 carrots diced
  • 2 stalks celery chopped
  • 1 red bell pepper diced

Seasonings & Spices:

  • tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt & black pepper to taste
  • ½ tsp red pepper flakes optional

Liquids & Enhancers:

  • 4 cups vegetable broth
  • 1 can 14.5 oz diced tomatoes
  • 1 tbsp lime juice

Optional Toppings:

  • Fresh cilantro
  • Diced avocado
  • Sour cream or Greek yogurt
  • Shredded cheese
  • Crushed tortilla chips

Instructions
 

Sauté Aromatics:

  • Heat olive oil in a large pot over medium heat. Add the diced onion and cook for 3-4 minutes, until softened. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.

Add the Vegetables:

  • Stir in the diced green chilies, corn, and fire-roasted tomatoes. Mix well and cook for another 2-3 minutes.

Combine Beans and Broth:

  • Add the black beans (both with and without liquid), vegetable broth, ground cumin, chili powder, and lime juice. Stir everything together and bring the mixture to a boil.

Simmer:

  • Reduce the heat to low and let the soup simmer for 30-35 minutes, allowing the flavors to blend and the soup to thicken slightly.

Taste and Adjust:

  • Taste the soup and adjust the seasoning as needed, adding more chili powder or lime juice to your liking.

Serve:

  • Ladle the soup into bowls and garnish with freshly chopped cilantro (optional). Serve warm and enjoy!
