Ingredients
  

  • 2 chicken breasts shredded
  • 1 can black beans drained and rinsed
  • 1 cup corn kernels fresh or frozen
  • 1 can diced tomatoes 14.5 oz
  • 1 red bell pepper diced
  • 1 onion diced
  • 2 cloves garlic minced
  • 4 cups chicken broth
  • 1 packet taco seasoning or homemade
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • ½ cup tortilla chips crushed
  • 1 avocado diced
  • Fresh cilantro for garnish
  • 1 lime cut into wedges

Instructions
 

Sauté the Vegetables:

  • Heat the olive oil in a large pot over medium heat. Add the diced onion, red bell pepper, and minced garlic. Sauté for about 3-5 minutes, until the vegetables are softened and fragrant.

Add the Chicken and Broth:

  • Stir in the shredded chicken, chicken broth, black beans, corn, diced tomatoes, taco seasoning, cumin, chili powder, salt, and pepper. Mix well to combine.

Simmer the Soup:

  • Bring the mixture to a boil, then reduce the heat to low. Let the soup simmer uncovered for 20-25 minutes to allow the flavors to meld together.

Prepare the Toppings:

  • While the soup is simmering, crush the tortilla chips and dice the avocado. Chop the cilantro and cut the lime into wedges for garnish.

Serve:

  • Ladle the soup into bowls. Top each serving with crushed tortilla chips, diced avocado, fresh cilantro, and a lime wedge. Serve immediately and enjoy!
