Ingredients
  

  • 4 large Portobello mushrooms
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic minced
  • 1 tablespoon soy sauce or coconut aminos for soy-free
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • Fresh herbs rosemary or parsley, for garnish

Optional:

  • 1 tablespoon garlic butter
  • ½ teaspoon chili flakes for extra flavor

Instructions
 

Prep the Mushrooms:

  • Clean the mushrooms and remove stems and gills.

Make the Marinade:

  • Whisk olive oil, balsamic vinegar, garlic, soy sauce, smoked paprika, pepper, and salt in a bowl.

Marinate the Mushrooms:

  • Coat the mushrooms in the marinade and let them sit for 15-20 minutes (or up to an hour).

Cook the Mushrooms:

  • Grill: Cook for 4-5 minutes per side on medium-high heat.
  • Pan-Sear: Sear for 4-5 minutes per side in a hot skillet with olive oil.
  • Roast: Roast at 400°F (200°C) for 15-20 minutes, flipping halfway through.

Optional Step:

  • Brush with garlic butter or sprinkle chili flakes during the last minute of cooking.

  • Serve with fresh herbs and your favorite sides like mashed potatoes or quinoa.
