  • 1 cup persimmon puree ripe Hachiya persimmons
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • 2 large eggs
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ¼ cup unsalted butter melted

For the Oatmeal Topping:

  • ½ cup rolled oats
  • ¼ cup brown sugar
  • ¼ teaspoon cinnamon
  • 2 tablespoons unsalted butter melted
  • ¼ cup chopped walnuts optional

Instructions
 

Prepare the Persimmon Bars:

  • Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan.
  • In a medium bowl, combine the persimmon puree, brown sugar, eggs, melted butter, baking powder, and salt. Mix well until smooth.
  • Gradually add the flour and stir until fully combined. Pour the batter into the prepared baking pan and spread evenly.

Make the Oatmeal Topping:

  • In a small bowl, mix the rolled oats, brown sugar, cinnamon, and melted butter. Stir until everything is well combined.
  • Sprinkle the oatmeal topping evenly over the batter in the pan. If desired, sprinkle chopped walnuts on top for extra crunch.

Bake:

  • Place the pan in the preheated oven and bake for 25-30 minutes or until the bars are golden brown and a toothpick inserted into the center comes out clean.
