Ingredients
  

  • 2 cups basmati rice cooked and cooled
  • 2 large eggs beaten
  • 1 tablespoon ghee or oil
  • 1 medium onion finely chopped
  • 2-3 green chilies slit
  • 1 teaspoon black pepper powder
  • 1 teaspoon garam masala
  • ¼ cup curry leaves
  • 2 tablespoons soy sauce
  • ¼ cup chopped spring onions for garnish
  • Salt to taste

Instructions
 

Prepare the Ingredients:

  • Cook the basmati rice and let it cool.
  • Beat the eggs and chop the onions and green chilies.
  • If using veggies, chop them into small pieces.

Cook the Eggs:

  • Heat ghee or oil in a large pan or wok over medium heat.
  • Add the beaten eggs and scramble them until cooked through.
  • Set the scrambled eggs aside.

Sauté the Onions and Chilies:

  • In the same pan, add a bit more ghee or oil if needed.
  • Add the chopped onions and green chilies.
  • Sauté until the onions become soft and golden brown.

Add the Spices and Curry Leaves:

  • Add black pepper powder, garam masala, and curry leaves to the pan.
  • Stir for 1-2 minutes until the spices become aromatic.

Combine Rice and Eggs:

  • Add the cooled basmati rice to the pan, breaking up any clumps.
  • Stir well to mix the rice with the spices and onion mixture.
  • Add the scrambled eggs back into the pan and combine everything thoroughly.

Season and Garnish:

  • Pour in the soy sauce and add salt to taste.
  • Stir everything together and let the rice fry for another 2-3 minutes, ensuring it's well-coated and slightly crispy.
  • Garnish with chopped spring onions before serving.
