- 2 large eggs beaten
- ½ cup green peas
- ½ cup diced carrots
- ½ cup chopped onions
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- 2 cloves garlic minced
- 2 tablespoons chopped green onions for garnish
- Salt and pepper to taste
- Optional: A pinch of chili flakes for heat
Scramble the Eggs:
Heat 1 tablespoon of vegetable oil in a large pan or wok over medium heat. Add the beaten eggs and cook, stirring constantly, until they are scrambled and cooked through. Remove from the pan and set aside.
Sauté the Vegetables:
In the same pan, add a little more oil if needed. Sauté the chopped onions, carrots, and green peas for about 3-4 minutes until they begin to soften.
Add Garlic and Soy Sauce:
Combine Rice and Eggs:
Add the cooked rice to the pan, breaking up any clumps with a spatula. Stir-fry the rice for 3-4 minutes, ensuring the rice is coated with the soy sauce and heated through. Add the scrambled eggs back into the pan and mix everything together.
