For the Crust:
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter cold and cubed
- ¼ cup granulated sweetener or sugar substitute
- 1 egg yolk
- 2 –3 tbsp ice water
- ¼ tsp salt
For the Filling:
- 3 large apples peeled, cored, and sliced
- ½ cup pecans chopped
- ¼ cup maple syrup or honey
- 2 tbsp unsalted butter melted
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tbsp lemon juice
- 1 tbsp cornstarch
For Topping (Optional):
- Extra pecans for garnish
- Caramel drizzle
- Whipped cream or vanilla ice cream
Prepare the crust:
In a food processor, combine flour, butter, and salt. Pulse until the mixture resembles coarse crumbs. Add egg yolk and pulse again. Gradually add ice water, one tablespoon at a time, until the dough comes together. Shape into a disc, wrap in plastic wrap, and chill for 30 minutes.
Prepare the apple filling:
In a large bowl, toss the apple slices with lemon juice, cinnamon, nutmeg, maple syrup, melted butter, and cornstarch. Mix until well-coated.
