Ingredients
  

  • 1 lb ground beef or turkey
  • 1 medium onion diced
  • 1 can 15 oz diced tomatoes
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn kernels, drained
  • 1 packet taco seasoning mix or homemade seasoning
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 4 cups beef or chicken broth
  • 1 cup water
  • Salt and pepper to taste
  • Optional toppings: sour cream shredded cheese, tortilla chips, chopped cilantro

Instructions
 

Cook the Ground Meat:

  • In a large pot, cook the ground beef or turkey over medium heat until browned, breaking it apart with a wooden spoon. Drain any excess fat.

Sauté the Onion:

  • Add the diced onion to the pot and sauté for 2-3 minutes until softened.

Add the Seasonings:

  • Stir in the taco seasoning, cumin, and chili powder, and cook for 1 minute to release the flavors.

Add the Vegetables and Broth:

  • Add the diced tomatoes, kidney beans, black beans, corn, beef or chicken broth, and water to the pot. Stir to combine.

Simmer the Soup:

  • Bring the soup to a boil, then reduce the heat to low. Let it simmer for 20-30 minutes, stirring occasionally.

Season to Taste:

  • Taste and adjust the seasoning with salt and pepper if needed.

Serve and Top:

  • Ladle the soup into bowls and top with your choice of sour cream, shredded cheese, tortilla chips, or chopped cilantro.
